Fall is a special time of year in Korea: it’s the time when kimchi reaches the perfect age.  Like a good bottle of wine, kimchi has just one month to shine while on its journey from fishy to spicy to way too fermented.  That time is now.  Let us seize the moment with several unusual but delectable uses for our favorite side dish.  Click on the photos to access the complete recipes.

Kimchicken Soup

             This cold season, liven up your chicken soup with a splash of our favorite red pepper friend.  Just tofu, chicken, and kimchi in a pot.  Seriously, it’s the healthiest dish I’ve ever heard of.  Eat it and you will LIVE FOREVER.

 

Kimchi Burgers

 

Another great pork dish.  Combines ginger, onions, egg, and garlic with a kimchi relish.  Substitute regular mayonnaise for Japanese mayonnaise or you might offend someone.  Korean mayonnaise is the best mayonnaise!

 

Kimchi Steak and Eggs

A simple twist on kimchi fried rice with steak and a fried egg to boot.  This dish is a murder-lovers classic. 

 

 

Kimcheese Sandwiches

EXACTLY as it sounds.  If you’re not salivating right now, it’s like I don’t know who you are anymore.

 

 

Seared Pork Chop and Kimchi

Requires a little marinating time so start prep at least one hour before eating.  This recipe actually encourages you to fry kimchi in bacon fat and honey.  Pork chops can easily be cooked in a toaster oven.

 

 

Kimchi Pasta

Kimchi, gochujang, and samgyeopsal mix together in this vibrant fusion food.  It’s like putting all of Korea on pasta. 

 

 

Kimchi Puree with Bacon

Yet another delectable pork-kimchi combo, this recipe is for a puree which can be used to top vegetables.  The recipe recommends brussel sprouts but, seriously?  You can use it to top asparagus, which can be found in packs at major grocery stores like Home Plus.  And if you can find brussel sprouts, be my guest.  OR, for a meat lovers treat, try the puree atop a pork chop or grilled chicken breast.

 

 

Kimchi Quesadillas

Kimchi, cheese, tortillas.  What could go wrong.  FYI, you can now buy tortillas in any major grocery store.  Look in the frozen section for these babies. 

 

Korean Burritos

Pork, ginger, onions, lettuce, and, you guessed it, kimchi, leap into this delectable Mexican fusion dish. 

 

 

Kimchoco Cookies

Yeah, we’re going there.  No recipe list would be complete without at least one dessert.  Substitute pre-made kimchi chocolate for the cayenne pepper in the above recipe to make an intriguing and maybe disgusting treat.
